I hope someone can give me an answer on this. If I change from my current carrier, would the Apple Store be able to help set up my phone for the new carrier or is that something I have to do on my own. I am a little nervous to change because I don't want to lose my number and have any issues with the new carrier.

After that, contact your new carrier and ask about transferring, and porting your number. They should be able to help you. Just make sure that you have a current backup of the iPhone before doing any of this.
