How do I change the card that I am using for Apple Pay at checkout.

In some apps when using Apple Pay I am given the option to choose any cards in my Wallet to pay, however in some apps like YouTube they don’t present any options to change or choose payment method even though it comes up as “Apple Pay” How can I fix this without simply choosing a default card. I would like to always have the options of what card to pay with at checkout
