Documents folder missing
I can't locate my Documents folder with all my work in it in the Finder. Instead it opens a "Documents" folder containing folders called Keynote, Numbers, Pages, Preview, and TextEdit.

That sounds like the On My Mac folder. Could be the aliases in the SideBar are mixed up.
What happens if you choose Documents from the Go menu in Finder?

The Go menu in Finder takes me to the same five empty folders.
Do you have Desktop & Documents in iCloud Drive enabled. Look in the iCloud Drive section.
If not, look inside your home folder (cmd-shift-h).
