not all my data transfered iphone to iphone?

I (traded in) bought a new iphone 13 pro- they had me take the sim card out of my old phone. Not all of my apps/ texts etc. moved over to the new device?

There are no data or apps on the SIM card that transfer. You will need to setup your new iPhone from your last backup.
