So I followed the aforementioned steps under "If you can’t remember the password for your encrypted backup" but my password was not reset. I haven't done a backup for my iPhone on this Mac so I'm not sure how to reset the password and start a "new" backup with a new password... any advice?

The reset will reset the password on your device (you will not be able to use the encrypted backup that you previously made). When you make a new encrypted backup, it will prompt you to add a password.
Thank you for the reply! I never backed it up on my old Mac either though - I only set the encrypted backup up but never finished the process of downloading my backup. Just finished backing up for the first time, would I need to go through the entire process again (assuming the backup today is under the "old" password)?
