You can't manually control the balance. It will be applied to whatever charge of the 4 you posted that comes due first.
You are welcome. That depends on whether the subscriptions were made through Apple or are a direct subscription with HBO or Netflix using a credit card.

If they are being charged through your Apple account, then yes. Any charge through your Apple ID will get deducted from your gift card balance.
