Check Recently Deleted in notes. If the note you deleted is not immediately deleted by your account (some notes cannot be recovered), it will be there. If you delete an item from Recently Deleted, it is permanently deleted.

You can also check the email accounts to which you have notes attached. Some keep deleted notes in trash.
