it's really unfortunate that it's so hard to find the information about the adapter for the iWatch series 7 especially since its not in the package .. expect more from Apple to be "ready to use out of the box" ... disappointed... no warning to the user that you need a usb c (I think) adapter... I am still unsure if I buy a usb c adapter it will work or I have to keep looking :( ...

Apple gives a list of the items in the box, and a charging brick is not listed.

As for what to get. Any USB-C computer port, or USB-C power supply, whether it delivers 10watts or 140watts, it will work, and the Apple Watch will only use what it needs.

If you have a previous Apple Watch, you can use the charger that came with that Apple Watch.

For the Series 7, a 20watt (or higher) charger will enable "Fast" charging.

USB-C is the current USB standard, and there are governments pushing for USB-C to be "The" standard for charging any handheld portable device. Some of those same governments are also pushing to eliminate e-waste and are pushing companies to Not include a charge with every portable device.
