Presumably you’re talking about outgoing messages.
If they’re sent to Apple devices, the recipient would see your name if your Apple ID and/or telephone number matches an entry in the recipient’s Contacts.
If you’re talking about an SMS message sent to someone’s cell phone, only the telephone number of the sender is communicated.
