my apple watch series 3 has been stuck on the info screen and it is unpaired and won't connect when i try to connect it says pair to iPhone but won't pair i needed to update it so as i got a new phone i would disconnect it and while pairing my watch to my phone it would update so then when i tried so i did a hard reset didn't work still on the same screen

FWIW, a lot of people have problems updating a series 3 watch due to insufficient memory. in some cases, unpairing the watch, completely erasing it, and then updating and restoring the backup will allow you to update it.

Another option (maybe even better, if possible) is to take to make an appointment at the Genius Bar in an Apple Store near you and let them update it.
