The Mai app for Mac does not natively support the Read Receipt functionality.
Other email clients like Outlook, Gmail, Thunderbird etc... do. Its a fairly standard feature, mostly used in corporate environments.

One could alway include in the outgoing e-mail " Please Acknowledge Receipt to this e-mail "
As to whether or not that will work will depend on the receiver of the e-mail
It's not possible unless the recipient emails you back and says "I opened your email". Of course they could just be saying that.
If you could do that and you sent me an email it would be the last email I read from you. It is none of your business if or when I read my email.
Yeah, perhaps Apple feels almost nobody would or does use it anymore in this day & age!?
