I purchase my Mac mini and magic keyboard with Touch ID in Nov 2021. The Touch ID unlock function works for other app on Mac mini except locked note on Apple Notes. I had tried the methods suggested in Apple support web, ensure the system preference setting of Touch ID, updated Mac OS etc.
Any other suggestion that I can try to make it works for Apple Notes.
Mac mini 2018 or later
On the Preferences, click the Set Password button. You can set it to the same as you used before.
Once you set the password, it will enable the TouchID checkbox.
However, it still does not enable touchID for previously locked notes. I had to remove the lock, then add it back.
