i have a new Iwatch 7 and my original Iphone 8, both fully updated, but the text messages are not aligned between the two. i also find that my iphone and iPad quickly loose alignment too. tried disabling icloud messages, the mirror iphone in iwatch app but nothing is working.
i have older messages on watch that have been days ago deleted off phone.

It sounds like you've got Messages in iCloud enabled (Use Messages in iCloud) which should keep your entire message history updated and available on all your devices automatically.
Are both devices connected to Wi-Fi with internet working too? If so, we would recommend turning off Messages in iCloud, restarting both devices, then turn Messages in iCloud back on. This will refresh everything and re-sync.
