Were you able to go through these steps?


Just as an FYI, the article explains: “The Bedtime feature is available only on iOS 13 or earlier. If you're using iOS 14, learn how to track your sleep on Apple Watch and use Sleep on iPhone.” In iOS 14 and beyond, the Bedtime feature is going in the Health app, not the Clock app as with earlier versions.
