I have s6 nike and it is good with monitoring my health. So i figure can the watch notice I am coming down with covid-19 with breathing, body temperature etc.

It might be able to give you some indicators that you are sick. However, you need a specific test that detects the virus to find out if you've been exposed to SARS-COV-2. A doctor would then need to evaluate your entire set of symptoms to diagnose you with COVID-19.
