Needing Help Please Taking Music OFF the iPod Touch

I am gifting my iPod Touch (5th generation) to my daughter. I am trying to take all of the songs off my iPod, and placing more kid-friendly songs to it. I have restarted the iPod, and restored it. However, once I get it running again, and when I got into my Music app, all of my songs are still on there. How do I get it off? I have tried doing it on iTunes, and placing all of the songs from my account on the iPod but it does not reflect on the iPod itself. Please help.
