I purchased an Apple 7 watch for my husband for Christmas, however I didn't purchase the one with the cellular option. Is it possible to exchange the watch? It has been opened and some packaging has been thrown out.

I doubt it,the best thing now would to be to trade it in or sell it privately.
If you buy the GPS only version of the watch you can make calls and send texts as long as you have your phone with you,with the cellular version of the watch you can make calls and send texts without having your phone with you.So in reality your paying $10 a month so that you can leave your phone at home.
