I recently purchased a 2021 14-inch Macbook Pro Model running Monterey 12.0.1. When the macbook goes to sleep for about 30 minutes or longer, it shuts down completely, which is not desired behavior. How do I stop this from happening?

Try starting the update using the Terminal.app this will bypass the secure token/owner check from the Software Update pref pane:
sudo softwareupdate -i -a -R
-i Install
-a All appropriate updates
-R Automatically restart (or shut down) if required to complete installation)

Update your macOS to the current stable release macOS 12.1— for known issues.

On top of shutting down on sleep, now it has started crashing after the most basic operations like opening spotlight. This has to be one of the buggiest OS's I've ever used!
