How can I switch my Apple ID email connected to my Apple Music account so that it is the same as my Apple ID on my phone?

You cannot transfer subscriptions between Apple IDs.
If you have multiple Apple IDs and your Music subscription is linked to one ID but not the other, you would need to cancel it from the one ID it is linked to, and start it on the other Apple ID normally.
