It appears that you're unable to find the Mail app on your iPad Pro. Check out the following article and see if you can find the Mail app by searching for it: Use Search on your iPhone, iPad, or iPod touch - Apple Support

Since your iPad Pro has iPadOS 15, you could also try finding the Mail app in the App Library as well: Find your apps in App Library on iPad - Apple Support
