How can I sync calendar when it does NOT appear in the desktop iTunes list?

The Calendar does not appear in the list because you are using some housing method that does not lend itself to syncing using iTunes.
Check Settings > Calendar > Accounts and figure out where your calendar is housed. That will determine the sync method.
