You can not pair an AppleWatch with an iPod touch for starters.
You can not access music on another device like an iPod from your iPhone. If the content is purchased from the iTunes Store, you can re-download previous purchases by signing into your Apple ID on both devices, making your purchases available on both. If the content was synced from a computer, you will need to sync your iPhone with the same computer in order to transfer the music. You also cannot send content from an iPod directly to the iPhone or take content from the iPod and store it to the computer unless it was purchased directly from Apple (answering additional questions in advance).
