I was creating a disk image (on the internal SSD) from a folder on an external SSD when the error occurred (see below).
Using a copy of the folder copied to the internal (system) drive did not produce this error. Note that Full Disk Access privilege is enabled for the Disk Utility application.
Would anyone have an idea of what could be causing this issue?

This has traditionally been error prone—use an alternative.

Someone else recently noted that giving Disk Utility Full Disk Access allowed that to work.

That’s why I thought it was odd that you asked the question. Did it stop working?
I stopped getting the permission error but creating the disk image with the Disk Utility result in an "Operation timed out" error.
