Welcome to Apple Support Communities! We understand your concern with which email is being chosen to send an email. We're happy to assist you with this.
You can set which email you want to use as the default email address by following the steps below:
3. Under Composing toward the bottom, tap Default Account.
4. Select the account you want to use and then tap the arrows on the top left to go back or just close your Settings.
