If I type a message on my computer and then edit it, inserting a word or phrase, that which I have edited repeats in odd places, scrambling my message. Or when I edit a word, an apostrophe replaces or is added to the edited word. Has this happened to anyone out there? I am using Big Sur.

I had this same issue in Messages on my Macbook Pro laptop and it was becoming a big problem, creating many miscommunications and a lot of irritation. I turned off the autocorrect spelling and grammar options and that seems to have stopped it from happening.

We do recommend attempting safe mode to see if the behavior persists. Messages is a default app and cannot be reinstalled without reinstalling macOS, so safe mode will help determine if this step is necessary.

I have the same experience. I am using Big Sur with my MacBook Air, but the same thing happens when I use Messages on my iPhone 6. It only happens when I am editing a fairly lengthy text. When I edit (backspace, cut and paste, delete forward), I notice that apostrophes (first) and then eventually my previously typed words and phrases just pop into random places. I have eventually just given up, deleted the whole message, composed it in a text app, and pasted it back into messages. This happens very often, but I can't make it happen at will, like right now, as I try to pay attention and diagnose. But it most definitely happens!

Yup, that pretty much sums up the issue as it occurs for me. I just upgraded to the newest macOS; I’m hopeful that problem disappears with the upgrade. But, like you, I cannot will it to happen, either.
I have the same problem in Mac Messages. It happens on my Intel 2019 Macbook Pro and also on my M1 Macbook Pro.
Mine is also a 2019 MacBook Pro. I wonder if the problem appeared when I switched to an upgraded OS. Did you switch to safe mode like the first responder recommended.
