It's not Apple that's tracking you. Look closely. The heading says Apple, but the actual tracker is adobedtm.com. Short for Adobe Dynamic Tag Management. It's a marketing tracker, which is why it shows up as blocked. What does it do?
Dynamic Tag Management enables marketers to manage tags for collecting data, and distribute data across digital marketing systems. For example, use Dynamic Tag Management to collect usage data for your AEM website and distribute the data for analysis in Adobe Analytics or Adobe Target.
Internet sites have always tracked you. It is only recently that Apple has made users aware just how much tracking is done. As BDAqua, says it’s all about money. When a website can track you, they know your browsing habits, they know which site you were viewing before hitting their site. They would know which site you viewed after leaving their site. Knowing this, they could serve up ads specifically targeted to you. Now that Apple helps prevent tracking, they no longer are able to know your website activities.
Actually, if you read the message you’ll see that Safari (Apple) is preventing a huge number of sites from tracking you. I would consider that an awesome thing.
I don't see where they are tracking you, I see they are keeping track of who is tracking or trying to track you.
I may be wrong, but it looks more like Apple is allowing you to see who is tracking or trying to track you... how could that be done without some kind of tracking?
It's all about money & Ads.

That is rare, but Apple never tracks you. If they do, use google chrome or other search engine app in the mac app store.
Google never stores your data.
Let me restart: I am fully of how the world works and how websites regularly attempt to track me. However, Apple claims to never track you, so what I want to know is why they are even trying to track me in the first place if they claim not to track people?

In the screenshot I provided, apple.com is in the list of websites that tried to track me.
As per all the previous posting and explained.

To protect the user from themselves.
After all - Apple knows better than the user what they need and do not need.
