Only by picking them up be some other means, then pasting or entering them into Numbers.

Numbers' connection is through Yahoo! Financial, and under the agreement,Yahoo! supplies only previous day closing prices.

You can make a request to Apple for for more up-to-the-moment results through the Provide Numbers Feedback menu item in the Numbers menu, or check the Mac App store for financial software more focussed on the market and it's ups and downs. Or both.

If you need truly "live" quotes then you probably have a broker or custodian with a website that can give you that information.

If you can live with intraday "delayed" quotes (these are updated during the trading day but are not live) then you can set up a sheet in Google Sheets with your symbols and copy paste prices into Numbers when you need them. You can also set up a portfolio in Yahoo! Finance for the same purpose.

Most consumer grade portfolio software also only provides delayed quotes unless you pay extra for live quotes.

Numbers does not provide intraday quotes. It is supposed to retrieve the closing price of the previous day from Yahoo! Finance. For various reasons it is not always successful in doing that. That means it is not a good substitute for specialized portfolio tracking solutions. It does, however, provide a convenient way to calculate the approximate values.
