Quick Start supposedly can only be done via a new setup, whether that's factory fresh out of the box or restored to factory settings. I believe they usually recommend that both devices are connected to power, so I'm thinking there's no way to restart when it's been interrupted by powering down.

If you don't mind answering, how long was it taking, and about how much data?

Thanks for the info. Do you need to do it via Quick Start? It might be easier if you've got a PC or Mac to do it, although 45 GB of data can be pretty slow at USB 2 speeds over a Lightning cable.

Maybe consider restoring the new iPhone to factory settings and then backup you old iPhone to a computer, then set up the new iPhone from the backup. But it would require a lot of available storage on a computer. Or you could just restore to factory settings and try Quick Start again. Not sure how to safely get your old iPhone to stop thinking it's performing Quick Start though. Is there a cancel option?

thanks - my new iPhone was preset to transfer my old phone # over....if i completely restart the process, will that 'set up' be lost? also, does your answer mean that it isn't possible to resume / finish the prior transfer? The new phone seems functional...supposedly data was going to 'continue transferring in the background' and the old phone is stuck on '6 mins remaining'

Do you use an eSIM on your old iPhone? If YES, then it will transfer with your Phone number. If you do not use an eSIM on your old iPhone then you can simply transfer the SIM card from your old iPhone to your new iPhone. There is only one way to establish a Quick Transfer so even if you start over again, then you won't miss anything.

On the other hand, If your new iPhone continues to complete the data transfer, and, after some time, you can confirm that everything has transferred and take things from there.

Can you get to the Home Screen on your new iPhone? If YES, the open Settings ➡️ General ➡️ Transfer or Reset iPhone ➡️ Erase All Contents & Settings ➡️ Continue: This will return your new iPhone to factory settings and remove all data that was previously installed. You can then repeat the process of ➡️ Using Quick Start to transfer data to a new iPhone, iPad, or iPod touch

eSIM i believe - i ordered the phone online from Apple and specified the phone # of the phone being replaced. When i went to pick it up, they said that as soon as i plugged in the new phone it would become operable with that phone #. It seems that both phones (old and new) ring when i call the number....it's just that it seems all the data didn't transfer even though i have no way of knowing what didn't get transferred. if that 'about 6 mins' remaining notice wasn't on the old phone, it would otherwise look to me like the new phone is functioning fine. since i don't know what might be missing, seems in need to wipe the new phone as you described and start over while relying on the ability to transfer the phone # again - that sound right?

Apps aren't really transferred and haven't been for some time as they're now only loaded via the App Store over the air.

There might be a lot of junk that's stored but doesn't get transferred. For whatever reason, iOS can be slow in its garbage collection where it should clear out temporary files (that don't get backed up and don't get transferred).

I ended up not going the erase all content / settings route, as when i went to do so it would have erased the cellular plan on the new phone, and that was already removed / transferred from the old phone so 1) i would have been without cell service and 2) i don't know how i would have been able to re-establish it. also, the amount of apps / data that had been transferred to the new phone is massively lower than is what on the old phone (~55GB vs ~95GB), so apparently there is a lot that wasn't transferred, even though it said 'approx 6 mins' remained. not sure what next steps are....maybe genius bar is the only option.
