Although not a guaranteed fix, you can try to use safe mode on your Mac.
The idea is that once you're in, you just restart back to normal to see if the problem is fixed.
Give it a try if you like, I just can't guarantee that it would work. 😉
Adobe requirements are 8 GB of RAM (16 GB recommended). Previously I had a 2013 imac with 8 gigs of Ram and I changed it because it was old and I wanted a better processor. The truth, I feel that the new Imac M1 works just as slow as my Imac 2013
Have you installed and run any "cleaning", "optimizing", "speed-up", anti-virus or VPN apps on your Mac?
You may also be opening an Illustrator file that is sufficiently large and complex to exhaust the available RAM in your M1 Mac. Adobe recommends 16 GB RAM for Illustrator.
The file I'm working on is 130 Mb. I have worked with much more complex files on my old Imac.
