When using QuickPath I find swiping 'mum' always corrects to "mum's".
I have tried turning off Auto-correction, Check spelling, and, Predictive, collectively, or individually, then restarting the phone. Also, adding "mum's" to the text replacement function hasn't resolved this either.

As the page will help note, "As you slide to type, you see suggested alternatives to the word you’re entering, rather than predictions for your next word."
You may also try using the suggestions there for editing, undoing edits, etc.
We also note there's a newer iOS version available with further fixes and improvements. The latest version is currently iOS 15.2.1: Update your iPhone, iPad, or iPod touch
You can also try resetting the keyboard dictionary at Settings > General > Transfer or Reset iPhone > Reset > Reset Keyboard Dictionary.
