I can find my Downloads folder but I can't open it or see what's in it. I've unlocked it, but can't go any further. All the airdrops that come in go to this folder but I can't see them.

That would seem to say that you are clicking on an alias and not the original downloads folder. To get it back you need to go to recovery and reinstall your operating system. Are you running a Matchbook Air OS12.1?
I would first open Finder and go to your startup drive (usually named macintosh HD)>Then to the Users folder>Then to your User. There you should see your Document folder and your other user folders.
