How to set a default font in Notes App (on Mac Book Pro)

The answer in the forum did not address my question...only how to change a font in a note you are writing. I need to set the DEFAULT font "permanently" and the "Preferences" for Notes does not address this at all,. Can anyone guide me through?

PS I love the award-winning Braille Font for low-vision folks and it is free to download. It is called Atkinson Hyperlegible and can be found here: https://brailleinstitute.org/freefont

I did as @OldToad suggested! Here is a copy of my request for a new feature & I put it in the category of "accessibility"...

I would like to be able to set a default font for the Notes App on a MacBook Pro. There is no way to set a default font on Notes. Can that be an added feature to the "preferences" screen in Notes?

FYI: There is an award-willing Braille font, for low-vision readers. I have downloaded and want to use all of the time. The Font can be downloaded here and I use it all the time: www.brailleinstitute.org/freefont
