M1 iMac -- only one resolution option under scaled?

Brand new M1 iMac running Big Sur. I want to change the screen resolution to make things easier to read (this is for my mother-in-law). But when I go to Display and click Scaled, only one resolution comes up: 2240x1260. Where are all of the other options?

Go to the Display Preference > hold the Alt (option) key > click on the Scaled button.
