When opening Finder, I find a disk called "Update" and "Update - Data" after reinstalling the OS. I still see Macintosh HD and Macintosh HD - Data though. What are Update and Update - Data?

Thanks for the screenshots.
Go to Finder > Go > Computer, and move any important user data from "Macintosh HD" and "Macintosh HD - Data" to the "Update" volume.
Next, go to Disk Utility again, select both "Macintosh HD" and "Macintosh HD - Data" and delete them using the minus symbol above "Volume".
You can then finally rename the "Update" volume to the proper "Macintosh HD" name.
Take the screenshots again to make sure everything looks right after that.

Hi, thanks for responding. I am running macOS Monterey 12.1 and using an iMac mid 2017. I did the reinstall on Big Sir but I can't remember the exact version. When I upgraded to Monterey, "Update - Data" went away. Here are the screen shots.
I deleted them and renamed "Update". I also added Macintosh HD - Data again. It seems to have worked. Here are the screenshots.

However, when taking the screenshots, make sure to select "View" > "Show All Devices" first. Also, when taking the screenshots, make sure the left sidebar is visible.

when i got the computer, Macintosh HD - Data came standard. Shouldn't i keep it?
When I have macOS versions spread out within the disks. Update is the one my computer is currently booting off of.
When I remove the volumes, I don't need to transfer everything over because each volume has a different version of macOS running on it.
The second “Macintosh HD - Data” also needs to go.

And you still have a "Data" volume. The volume you are erasing is an extra "Data" volume.
