I work with Pages quite a lot to write articles, however I'm not sure how to remove existing pages from the list in the Dock - it's inconvenient working this way as the pages I'm not working on anymore are still stuck there. These are all the blurred out in the screenshot. Is there a way to remove them and only keep ones I'm working on?

These are the same items that appear on your Pages > File menu > Open Recent panel. You have some options:
The next document you open or create will appear on that Recent Items stack until your opened documents exceed the counter in item 1 above, and then the oldest document is removed from the stack.
This is as good as it gets with Pages v11.2.
