Apple watch - Workout app and winter sports problems

I do a lot of winter mountain activities - snowshoes walking, going up peaks at extream weather conditions with crampons.

I try and record these with the workout app as "hiking" activities. However, the workout app keeps pausing thinking I've stopped for a rest when in fact I am moving very slow in waist deep snow with my snowshoes. How can I prevent slow strenuous workout to keep pausing my workouts automatically?

It is also really unpleasant to keep taking of your gloves at 60km p h wind to keep restarting your workout. It should just work!!!

When you start your workout slide right on the screen and tap on lock,then when you finish the workout turn the digital crown in one continuous movement to turn the lock off then slide right again and tap on end.

Or;

Go to the watch app on the phone and tap on workout,turn off autopause and end workout reminder.

Or on the watch in settings/workout and turn them off there.

As far as I know they are not. I noticed this happening when I slow down due to weather conditions and terrain - the watch thinks I ve stopped working out all together. In fact I need to stop due surroundings and make a decision of what to do next. Any stopping of walking on my part results in the workout being stopped. Mountaineering and not like a summer hike when you walk faster and stop for breaks. Even wondering if there is a 3rd party app for this or how to lock the workout app not to pause my workouts?
