Help - I’ve accidentally deleted the Macintosh volume instead of reformatting.

While trying to do a clean install I’ve deleted the Macintosh volumes (I think that’s what I’ve done) and am left with the APPLE HDD with container disk1 and a disk image MacOS Base System.

when I tried to install iOS Catalina it says “disk locked”

When I tried to recover from time machine it can’t find a disk to recover to.

I believe I need to recreate the volumes?

If this is the case, what steps do I need to take to do that?

No, it should be formatted as APFS, unless you're installing an earlier version of MacOS in which case yes it should be Mac OS Extended (Journaled). What is your MacBook Pro model?

You encrypt the drive after the OS is installed by going to System Preferences.
