The only correct documentation that they will accept is proof that you personally purchased the phone directly from Apple or from an Apple authorized reseller. If that is what you submitted then you will have to wait; they will get to it eventually.
If this was a phone that you purchased used from someone else, or from an “unofficial” seller they will not unlock it.
We are not Apple. Whether they will remove the lock or not depends on whether you were able to provide sufficient documentation to prove that you are the original purchaser of the device.
I provided them with the correct documentations in regards to the iPhone that’s locked, I just wanted to know or figure out how much longer will I have to wait until it’s unlocked because the lady I spoke with on the phone told me sometimes apple support takes 2 hours or 30 days. How can you go from 2 hours all the way to 30 days?

Yes, Best Buy is an authorized reseller (and also an authorized service provider).
