Siri and Calendar

Why doesn't Siri allow you to add an event to a specific calendar (not the default calendar)? The ability to create multiple iCloud calendars is an essential tool to organize my schedule.

You can do this, I've just asked Siri to schedule an event tomorrow in my Work calendar. Have you specified a calendar otherwise it will go to your default calendar. For example 'Hey Siri, schedule a call with Joe tomorrow at 12pm in my work calendar'.
