I have been having the same issue with Carplay disconnecting from my 2019 Toyota Camry. Dealer can't determine how to fix either. I had my sister borrow my car and her phone didn't have the same issue. Makes me think it has to do with app or software interface from my phone. Have you had any luck?

Yes. I found I had to completely remove my iPhone from the car’s system. Looked like it had two names in two different spots. Repair the iPhone and it has not had big issues since.
