If I created a volume on my m1 macbook air (Monterey), and use Erase content & settings will it delete the volume I created and it's contents?

Yes. In fact Step# 1 in this Apple article explicitly states that the Windows BootCamp partition needs to be removed before the "Erase All Content and Settings" will even work. The whole purpose is to make it easier to prepare the Mac for sale which means making sure all your personal data is destroyed.
