How do I stop my iPhone SE from typing everything it hears, whether from me, television, other conversations nearby, etc. while texting, in Messenger, or any other typed form of communication?

Check under Settings > General >Keyboards to see if Dictation is enabled on your iPhone: Dictate text on iPhone. If Dictation is enabled, turn it off to see if that resolves the issue you're experiencing.
