Two different displays

Hi - If i use a thunder bolt cable to connect my imac to my macbook air, will i be able to have a different display on each screen?

best option for second display I have to connect a second display to my Mac Studio max, a 27' Eizo 4K. Connected to my Mac Studio there's an Akitio Thunder3 QuadX which has 2 thunderbolt3 ports and 1 DisplayPort 1.2 for a second display. What's the best option between connecting my 2nd display directly to my Mac Studio and to my Akitio? Is DisplayPort preferable over usb-c for displays? Any input or suggestions would be much appreciated. I don't know much about this topic. Thank you!
