None of the external hard drives listed on the Apple website are shown as compatible with my 16 inch MacBook Pro 2021. Is this due to Monterey problems and is there any word of these being resolved?

Just about any external usb ssd will be compatible. Make sure you format the drive using Disk Utility prior to using it. Do not use any included third party apps to manage the drive, use Disk Utility.
