Is there a way to sort out my Library or make a playlist with only spatial audio songs? I would love to make a smart playlist that contains all of my added spatial audio songs, but can't seem to filter my library that way on my iPhone or MacBook.

While the option to sort for only spatial audio isn't available, you can enable "Automatic" so that supported songs automatically play in Dolby Atmos. See more on that here: About spatial audio with Dolby Atmos in Apple Music
