On iPhone 11, how can i change the battery indicator on main screen from battery-icon, to the current percentage of battery charge?

There is no option to do that. You can see the battery percentage by opening Control Center (swipe down from the top right corner of the screen). Another option is to install the Battery widget -- see: Use widgets on your iPhone and iPod touch - Apple Support
