Always on Display with just the time

how can i set my always on display on the watch which will only show ne the time?

Apple Watch Series 7, watchOS 8

Use the Always On feature with your Apple Watch

It will show you whatever Watch face you have selected. If you have a Watch face that has a number of complications, those complications will also show, with the exception of anything private that would require it to be unlocked to see. I have a Series 6 phone and use the Infograph Modular Watch face. I have complications configured for my battery, calendar, temperature, and other weather info. When the Watch locks, the screen remains and displays all info except the calendar content. If you just wish to see the time, then you would have to select a different Watch screen.
