Does backup of iPad to Mac save all the app's data

I need to replace my 2018 iPad Pro. So I need to use the Mac Finder to back up everything to my Mac and then restore it to the new iPad Pro.


When I back up, will it save all of the app's data? As examples, the Messages app, Signal app, and the Insta360 app store data. Insta360 is a video app that has videos in it. After I back up and restore to a new iPad Pro, will the videos be restored?


I assume that all of the apps will be restored to the new iPad Pro. Does Finder back up the apps to the Mac, or do the apps get downloaded from the App Store during the restore process?


My Mac is running Monterrey 12.1.

I backed up my iPad Pro and restored to a new iPad Pro. Insta360 has all of its data (videos), but Signal no longer does. All of its data is gone. That's unfortunate. Does anyone know if Signal's data was backed up to my Mac, and if so, how do I copy that into Signal on my new iPad?
