iCloud problem

I've been paying 99cents/month for additional iCloud storage and recently received an email that I have been upgraded to +. I hate to admit it, but I haven't known anything about iCloud since I've had the additional storage. I guess I assumed it would automatically back up everything and I didn't need it unless I had a problem and had to restore something. ...Fast forward to today... I just got a new iPhone 12 and gave my iPhone 7 to my husband. I had a rep at our Xfinity store to set up my new phone, leaving my contacts, notes, etc on my old phone and duplicating them on the new phone. I was thinking I could remove the items my husband does not want on the old phone. Problem 1. When I delete a contact from the old phone, it is deleted on my new phone. Problem 2. When I looked at iCloud.com, there is nothing there. Problem 3 The additional storage I've been paying for is not showing up there. Oh, my, I need help. Thanks!

Problem 2:

Please check the Apple ID that you have used to log in to the device.

What does iCloud back up? - Apple Support

iCloud backup doesn’t include information that is synced and stored in iCloud, like Contacts, Calendars, Bookmarks, Mail, Notes, Voice MemosMessages*, shared photosiCloud Photos*, Health data, call history, and files you store in iCloud Drive.

*-If you had turned on Messages in iCloudiCloud Photos, your content is automatically stored in iCloud and is available on all devices that use the same Apple ID
