I need to figure out if I can use the ScanSnap ix500 with my iMac still given it has updated to macOS BigSur - can't find an online link to update the manager.

If you cannot find a means to drive the ScanSnap ix500 on Big Sur, then the paid, VueScan Professional supports it without any Fujitsu drivers necessary. One can download a trial VueScan Professional prior to a purchase decision. VueScan Professional manual.
